MURG MUSSALAM


Murgh Musallam alias masala roasted chicken is a famous Mughlai dish for non-vegetarian people. This chicken recipe is mostly found in North-West India.

INGREDIENT

1 whole chicken (about 600 gm)
Beaten sour curd 2 cups
Garlic paste 2 tbsp
Ginger paste 2 tbsp
Red chilli paste 1 tsp
Raw papaya paste 3 tbsp (grate the papaya and make a paste)
Cream ½ cup
Saffron1/3 tbsp
Kewra water (essence) 2 tbsp

INGREDIENT FOR ROASTED MASALA

Cloves 3
Pepper corn 3
Cumin seeds ½ tbsp
Cinnamon stick 1
Brown cardamom seeds 4/5
Coconut 2 tbsp (grated)
Almond 5, mace 2, nutmeg ¼ tsp, roast all the masala and grind together)

PROCESS

Clean the chicken and prick all over with a fork, make cut over the breast and legs
Marinate chicken with salt, curd and ginger, garlic paste and keep for over night
Mix saffron with kewra water and cream, keep aside
Add grind masala, red chilli paste, papaya paste with chicken
Placed chicken in microwave oven in grill for 30/35 minutes
Pour saffron and cream
Serve with fried onion sliced
