DRY FRUIT PULLAO


This dish is a sweet and healthy rice preparation, taken from Rajasthan, a state of India.

INGREDIENT

Basmati rice 2 cups
Chopped almond ½ cup
Chopped pistachio 1 tbsp
Chronji (charoli) chopped ½ cup
Saffron 1 pinch
Milk 4 cups
Nutmeg powder 1 tbsp
Cardamom powder 1 tbsp
Sugar 2 cups
Dasi ghee 1 cups
Rose water 2 tbsp

PROCESS

Clean rice and sock in water for 2 hours
Drain out the water and spread rice over a flat and broad tray
Marinate rice with salt and sugar
Heat ghee in a heavy bottom pan and add rice, fry for few minutes
Add milk and cover the pan
Cook rice and add all fruits and powdered spices, stir well
Add saffron and rose water
