This is a Lucknow style pullao recipe, unique in taste.Try in Puja.


Basmati rice 3 cups
Chicken pieces 200 gm
Chopped onion 2 cups
Ginger and garlic paste 2 tbsp
Tomato puree 1 cup
Chironji (sunflower seeds) paste 1 tbsp
Fresh cream ½ cup
Peas 1 cup
Cloves 3
Green cardamom 5
Cinnamon stick 2
Star anise 3
Dasi ghee 4 tbsp
Rose water 2 tbsp
Yellow chilli powder 1 tbsp
Plane flour ½ cup ( knead a dough and give pipe shape)


Boil rice almost 50%
Drain out the water and spread out rice on a board try for 1 hours
Make a fine paste of cloves, cardamom, cinnamon, star anise with little water
Heat ghee in a heavy bottom pan and add onion, fry until crispy
Keep aside half fried onion
Add ginger & garlic paste in the same pot
Add chilli powder and chironji paste, cook for few minutes, add chicken pieces
Add salt and rice
Add tomato puree
Add peas and cream and cloves and other masala paste
Add ghee, fried onion and rose water
Cover the pan and seal with flour pipe
Keep the pot in low heat for 35 minutes
