This dish is cooked with some Indian spices, lemon juice and soy sauce. I am using potatoes, lemon, garlic and rice for stuffing.

Preparation Time: 20 minutes
Cooking time – 1 hour
Serve for - 4 persons


  1 Whole duck- 1 and half kg
  4 small size potatoes unpeeled
  8 mashed garlic flakes
  50 gram dehradun rice
  1 cup lemon juice
  4 tbsp soy sauce
  2 tbsp cooking oil
  Salt as per taste
  1 tbsp mint leaves


  Green capsicum (bell pepper) or red capsicum - 100 gm
  Onion – 50 gm
  Garlic - 10 gm
  Ginger - 10 gm
  Whole dry red chili - 2
  Green chili - 1
  Curry leaves - 4 to 6
  Nutmeg powder - 1 tsp (grind all of spices together, then separate in two equal amount; one for marinating and other for cooking)


Take a dressed and clean whole duck, inside parts must be cleaned, properly washed by water and wrap with kitchen towel
Marinate the duck with grinded spices, 2 tbsp soy sauce, half cup lemon juice and salt, leave for minimum 6 hours
Wash rice and potatoes, heat 1 tbsp oil in a sauce pan, add garlic flakes, wait for changing color into light brown, add rice, stir till comes brown
Add remaining spices, potatoes and soy sauce, seasoning with salt
Cover the pan, cook for 5 minutes
Add 1 cup water, simmer and cover, cook for 10 minutes, when water totally dry out, rice and potatoes cooked 70%, add lemon juice, remove from heat
Stuff the rice and potatoes inside the duck, now you can add more garlic flakes and chopped red chilies as per your choise
Pre heat oven at 350 degree F, Pore remaining oil over the duck, sprinkle mint leaves
Keep in oven for 40 to 50 minutes, the juice and melted fat of duck come out after few minutes, take a spoon to pour the juice on the upper part of duck to let it be cooked properly, follow the process twice at the time of cooking, It is a complete full meal, goes with wine.
