Stuffed green capsicum is one of the most popular recipes in the world. It can be served with steamed rice or bread. Different coloured capsicums can be used for this recipe. Here, cottage cheese is used for stuffing. Alternatively, shrimp can also be used for stuffing.
PREPARATION TIME = 15 MINUTES
COOKING TIME = 20 MINUTES
SERVED = 4 PERSONS
Cut top of the capsicums, chopped the top for further use, scoop out seeds and roots, wash, sprinkle salt, 1 tsp oil and vinegar, keep aside for 5 minutes, heat oven 350 degree F.
Heat oil, add onions, fry the onions until golden brown, add ginger paste, cook for few minutes, add stuffing ingredients as per your choice, seasoning with salt and pepper. Add chopped top of bell peppers.
Cook on high flame to evaporate the water completely and make the preparation dry.
Transfer into a bowl, add egg, mix well.
Put stuffing inside each bell pepper , take a baking tray, add little water, keep all capsicums on the tray and bake for 10 minutes at 350 degree F.
Garnish with fresh, chopped parsley.
