MEXICAN EGG CURRY WITH SOYABEAN & MUSHROOM SAUCE


It is a Mexican dish full with proteins and Vitamins.

INGREDIENT

Boil egg 4
Chopped onion 1 cup
Chopped ginger 1 tsp
Boil soya bean 1 cup
Boil mushroom ½ cup
Readymade salsa 3 tbsp
Chopped green chilies 1 tsp
Vinegar 2 tbsp
Refine oil 2 tbsp
Salt to taste
Sugar ½ tbsp
Grated mozzarella cheese 1 cup

PROCESS

Make a fine paste of soya bean and mushroom with little hot water and 1 tbsp vinegar
Heat oil in a pan and add onion, ginger and fry
Add soya and mushroom paste and cook until it becomes brown
Add chilies and vinegar
Add salsa, salt and sugar
Star well, add ½ cup water and eggs
Cook for 2/3 minutes
Add grated cheese
